1. Baked Lemon Butter Tilapia
Preheat the oven to 425F. Lightly oil a baking dish with a nonstick spray and set aside.
In a small bowl, whisk together 1/4 cup of unsalted butter, 3 cloves of minced garlic, and 2 tablespoons of freshly squeezed lemon juice.
Season 3-4 tilapia fillets with salt and pepper to taste. Place them onto the prepared dish and drizzle with the butter mixture. Bake for 10-20 minutes until the fish flakes easily with a fork.
2. Stovetop Ginger Soy Salmon
Drizzle a generous amount of olive oil in a cast iron or nonstick skillet over medium heat.
Season 2 salmon fillets with salt and pepper skin-side up for 3-4 minutes. Flip the fish and add 1 teaspoon of minced ginger and a tablespoon of soy sauce.
Cook for 3-5 minutes. Remove from the heat once the fish flakes easily with a fork. Top with chopped scallions.
3. Southern Fried Catfish
For this fried catfish recipe, you want to start by adding 2/3 cup of yellow cornmeal, 1/4 cup of flour, 1/2 teaspoon of cayenne pepper, and 1/2 teaspoon of lemon pepper into a Ziploc bag. Shake everything together.
Whisk 2 large eggs and 2 teaspoons of hot sauce in a large shallow bowl. Place 2-3 catfish fillets into the beaten egg mixture and add the cornmeal breading. Shake liberally to coat well.
Place the fillets on a coated baking sheet and let them set in the fridge for 10-15 minutes.
Pour in 4 inches of oil in a large dutch oven and heat over medium-high until the temperature reaches 340F. Fry the fillets until golden brown.
4. Oven-Roasted Chili-Lime Cod
Season 2-3 cod fillets with salt and pepper. Apply a generous amount of chili powder to the fish and drizzle with olive oil.
Place them on a foil-lined baking sheet and roast at 425F for 12-13 minutes, until the fish flakes easily. Finish with a squeeze of fresh lime juice and a pat of butter.
