Slow Cooker Short Rib Tacos

Summer entertaining is officially upon us, which means that it’s time to stock up on beef and break out the grill. Whether you’re grilling burgers for a crowd or serving up a sirloin steak for date night, beef is the perfect summer entertaining staple.
Slow Cooker Short Rib Tacos
Serves 6-8
2-3 lb. Beef Short Ribs
Salt and pepper to taste
1 teaspoon cayenne
1 teaspoon ground cumin
1 teaspoon smoked paprika
1 teaspoon garlic, minced
¼ cup beef broth
2 tablespoons tomato paste
¼ cup lime juice
Remove beef and set aside.
Combine cayenne, cumin, paprika, tomato paste, lime juice and garlic with the beef broth. Stir to combine
Transfer beef to a slow cooker and pour the beef broth mixture over the meat.
Cook on low for 6-8 hours or high for 3-4 hours
Shred beef with two forks and discard rib bones. Toss to coat with the juices.
To serve, spoon into corn or flour tortillas and top with red onion, cotija cheese and cilantro.
